Camellia sinensis, a member of the Theaceae family, becomes bitter when exposed to sunlight. To suppress this bitterness and develop a richer, sweeter flavor, the entire tea field is covered with shade to provide ample shade, and only carefully cultivated new shoots are used.
Growing new shoots in near-complete darkness without sunlight is an extremely difficult task. Furthermore, the tea-making techniques required to fully utilize the delicate new shoots require considerable experience.
This class of new shoots is carefully hand-harvested, and only a limited quantity can be produced. This matcha is the culmination of the growers' passion for tea, a flavor worth cherishing.
