Jingo no Mukashi (神護の昔) is a refined Nishio matcha from SAIJOEN by AIYA, selected for koicha, or thick tea. It delivers powerful body and concentrated umami, followed by a deep yet mellow flavor that unfolds gradually across the palate.

When prepared as koicha, its richness creates an experience reminiscent of tasting the tea leaves themselves. Its concentrated character and smooth mouthfeel make it suitable for traditional tea gatherings, serving guests and carefully practiced koicha preparation.

Richness Designed for Koicha

Koicha uses a larger amount of matcha and less water than usucha. Instead of rapidly whisking the tea to create foam, the matcha is slowly kneaded with a chasen until it becomes smooth, glossy and evenly blended.

This concentrated method highlights the strong body, rich umami and deep flavor of Jingo no Mukashi. It is an appropriate choice when you want to experience matcha in a fuller and more traditional form.

Suggested Koicha Preparation

  1. Warm the matcha bowl and chasen with hot water, then dry the bowl thoroughly.
  2. Sift approximately 3–4g of matcha into the bowl to help prevent clumps.
  3. Add approximately 60ml of water at 70–80°C.
  4. Use the chasen to slowly knead the matcha and water together rather than whisking rapidly.
  5. Continue until the tea becomes smooth, glossy and evenly blended.
  6. Enjoy promptly while its aroma and concentrated umami are at their freshest.

Storage

Keep the package tightly sealed in a cool, dark and dry place, away from heat, humidity, direct sunlight and strong odors. After opening, use the matcha as soon as reasonably possible to enjoy its color, aroma and flavor.

If refrigerated, allow the unopened package to return to room temperature before opening. This helps reduce condensation inside the package.
