Juko no Shiro (寿香の白) is a refined Nishio matcha from SAIJOEN by AIYA, made for usucha, or thin tea. It offers a smooth mouthfeel with a harmonious combination of gentle bitterness, natural sweetness and a delicate shaded-tea aroma known in Japanese as ooika.

Juko no Shiro has a subtle aroma known as ooika, a distinctive fragrance associated with tea leaves grown under shade before harvest. This traditional cultivation method is used for tencha, the tea leaves from which matcha is produced.
Ooika is sometimes compared to a soft green or aonori-like fragrance. In Juko no Shiro, this aroma gently complements the matcha's sweetness and mild bitterness without overwhelming its smooth character.

Suggested Usucha Preparation
- Warm the matcha bowl and chasen with hot water, then dry the bowl thoroughly.
- Sift approximately 2g of matcha into the bowl to help prevent clumps.
- Add approximately 60–70ml of water at around 80°C.
- Whisk briskly with a chasen until a fine, even foam forms.
- Enjoy promptly while the aroma and flavor are fresh.

Storage
Keep the package tightly sealed in a cool, dark and dry place, away from heat, humidity, direct sunlight and strong odors. After opening, use the matcha as soon as reasonably possible to enjoy its color, aroma and flavor.
If refrigerated, allow the unopened package to return to room temperature before opening. This helps reduce condensation inside the package.
