Yuzan (悠山) is a versatile Nishio matcha from SAIJOEN by AIYA, created for usucha, or thin tea. It offers a well-balanced combination of color, flavor and aroma at an approachable level, making it suitable for both traditional preparation and everyday use.

Suggested Usucha Preparation

  1. Warm the matcha bowl and chasen with hot water, then dry the bowl thoroughly.
  2. Sift approximately 2g of matcha into the bowl to help prevent clumps.
  3. Add approximately 60–70ml of water at around 80°C.
  4. Whisk briskly with a chasen until a fine, even foam forms.
  5. Enjoy promptly while the aroma and flavor are fresh.

The following estimates are based on approximately 2g of matcha per serving:

Matcha Latte Preparation

Sift the matcha into a cup or bowl and mix it with a small amount of hot water until smooth. Add warm or cold milk and sweeten to taste. Yuzan's refined astringency helps maintain a clear matcha character when combined with milk and sugar.

Cold Matcha

For a refreshing cold drink, combine matcha with cold water in a suitable shaker or tightly sealed bottle and shake thoroughly. Matcha does not dissolve completely like an instant powder, so shake again if natural settling occurs.

Storage
