Uji Matcha and Traditional Stone Milling
Matcha is produced from tencha, tea leaves cultivated under shade to limit direct sunlight. Shading encourages the development of umami while helping to control excessive bitterness and astringency.
After harvesting, the leaves are steamed and dried without being rolled. Stems and veins are removed to produce tencha, which is then carefully ground into fine matcha powder. Tsujiri matcha is traditionally stone-milled to create a smooth texture, full flavor, fresh fragrance and deep green color.
Juun no Mukashi is blended exclusively from selected Uji cultivars, giving it the aromatic depth and rich umami associated with premium Uji matcha.
Japanese Tea Ceremony Matcha
Juun no Mukashi is a distinguished tea ceremony matcha particularly suited to Koicha. In a formal gathering, Koicha may be prepared in one bowl and shared among several guests. For home enjoyment, it may also be prepared as an individual serving.
Its rich body and substantial umami allow it to be prepared at a higher concentration while maintaining an elegant and refined flavor. Those who prefer a lighter bowl may prepare it as Usucha using the official Tsujiri thin tea guideline.

Storage Instructions
- Store away from high temperatures, humidity, direct sunlight and strong odors

- Opening the can while cold may cause condensation and damage the matcha
- After opening, keep tightly sealed in a cool, dark place at room temperature
- Consume as soon as possible after opening for the best color, fragrance and flavor
- Matcha readily absorbs surrounding odors, so store it separately from strongly scented foods
Preparation Tips
- Sift the matcha immediately before preparation to remove natural clumps
- Always use a preheated and completely dry tea bowl
- Use fresh, soft water whenever possible
